Zucchini Noodles and Rich tomoto sauce
Prep Time: 15 mins , Cook Time: 10mins
RICH TOMATO SAUCE Fry gently in large pan 1 tbl olive oil 1 x red onion finely chopped 1 x large clove garlic crushed Add to pan 8 x small mushrooms chopped small cubes 1 x med sweet potato chopped small cubes Handful of fresh spinach 1 x tin organic tomatoes 3 x tablespoons tomato paste salt, pepper and chilli if desired
Best cooked slowly for 30 mins but can do quickly for 10 mins with heat higher if you're hungry Add chopped basil in last few minutes
ZUCCHINI NOODLES You need a spiraliser to make noodle shapes 3 med sized zucchini - do this while sauce cooking
Place noodles in bowls and pour sauce when ready. Can add Parmesan or substitute for flavor to serve
(If you are making for less people can freeze tomato sauce for next week!)
