Quinoa with Veggies
Prep Time: 15 min , Cook Time: 10 min
Quinoa, red/green&yellow pepper
mix peppers and ginger
Boil the quinoa for 10 minutes with a few slices of ginger, reserve. In a pan put some olive oil and add the garlic whic was sliced very thin, let them get a bit gold and add the pepper, stir for 5 min, reserve. In a tray put all the rest with a bit of olive oil add some pepper and cover with a lid living a little gap, put in the over 180° for 20 min, stir time to time, when u see the veggies are a bit soft (I like a bit crispy) then u take out of the over and mix with the quinoa.
