PRINT
  • Brown rice (2 cups)
  • Chickpeas (1 cup)
  • leek
  • turmeric
  • thyme
  • salt and pepper
  • coconut oil

DIRECTIONS

Boil and then simmer the rice and beans until soft.
In a separate pan, stirfry sliced leek in coconut oil. Add turmeric, thyme, and salt. stir fry until onions are soft and a little brown.
Then, add the onions and spices to the rice and bean mixture. Mix so that the whole dish turns yellowish from the turmeric.
Let simmer until all the rice and beans and onions are very mushy and the color is uniformly yellow.
Serve warm. Put extra away in the freezer, or keep in the fridge for up to 3 days.
